A delicious and hearty gluten free lasagna soup that combines the flavors of traditional lasagna in a comforting bowl.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 2 cups gluten free pasta
- 2 cups spinach
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
Instructions
- In a large pot, brown the ground beef with chopped onion and garlic.
- Add crushed tomatoes, beef broth, oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add gluten free pasta and cook until tender.
- Stir in spinach and cook until wilted.
- Serve with a dollop of ricotta and a sprinkle of mozzarella on top.
Notes
- Store leftovers in an airtight container in the fridge.
- This soup can be frozen for later use.
