Description

A delicious and hearty gluten free lasagna soup that combines the flavors of traditional lasagna in a comforting bowl.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 2 cups gluten free pasta
  • 2 cups spinach
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large pot, brown the ground beef with chopped onion and garlic.
  2. Add crushed tomatoes, beef broth, oregano, basil, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add gluten free pasta and cook until tender.
  5. Stir in spinach and cook until wilted.
  6. Serve with a dollop of ricotta and a sprinkle of mozzarella on top.
