Description

A delicious and easy gluten free hamburger casserole.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 can kidney beans (15 oz), drained
  • 1 cup corn (frozen or canned)
  • 1 cup gluten free pasta
  • 2 cups shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with onion and garlic.
  3. Add tomatoes, beans, corn, and spices. Stir well.
  4. Cook gluten free pasta according to package instructions and drain.
  5. Combine the pasta with the meat mixture and half the cheese.
  6. Transfer to a baking dish and top with remaining cheese.
  7. Bake for 25-30 minutes until cheese is bubbly.
