A delicious and easy gluten free hamburger casserole.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 1 can kidney beans (15 oz), drained
- 1 cup corn (frozen or canned)
- 1 cup gluten free pasta
- 2 cups shredded cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, brown the ground beef with onion and garlic.
- Add tomatoes, beans, corn, and spices. Stir well.
- Cook gluten free pasta according to package instructions and drain.
- Combine the pasta with the meat mixture and half the cheese.
- Transfer to a baking dish and top with remaining cheese.
- Bake for 25-30 minutes until cheese is bubbly.
Notes
- Serve hot for best flavor.
- Can substitute ground turkey for a leaner option.
- Add more vegetables as desired.
