A hearty gluten free chicken and dumplings recipe that is comforting and satisfying.

- 2 cups cooked chicken, shredded
- 4 cups gluten free chicken broth
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 cup onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup gluten free all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup milk
- 1/4 cup butter, melted
Instructions
- In a large pot, combine chicken broth, carrots, celery, onion, garlic powder, onion powder, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer until vegetables are tender, about 15 minutes.
- In a bowl, mix gluten free flour, baking powder, and salt. Stir in milk and melted butter until just combined.
- Drop spoonfuls of dumpling mixture into the simmering broth.
- Cover and cook for 15 minutes without lifting the lid.
- Stir in the shredded chicken and heat through.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- Reheat gently on the stove.
