A hearty gluten free chicken and dumplings recipe that is comforting and satisfying.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups gluten free chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 cup onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup gluten free all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk
  • 1/4 cup butter, melted

Instructions

  1. In a large pot, combine chicken broth, carrots, celery, onion, garlic powder, onion powder, thyme, salt, and pepper. Bring to a boil.
  2. Reduce heat and simmer until vegetables are tender, about 15 minutes.
  3. In a bowl, mix gluten free flour, baking powder, and salt. Stir in milk and melted butter until just combined.
  4. Drop spoonfuls of dumpling mixture into the simmering broth.
  5. Cover and cook for 15 minutes without lifting the lid.
  6. Stir in the shredded chicken and heat through.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat gently on the stove.
