Delicious gluten free blueberry muffins that are easy to make and great for breakfast or snacks.
Ingredients

- 1 1/2 cups gluten free all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1/2 cup milk or non-dairy milk
- 1/3 cup vegetable oil
- 2 large eggs
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the gluten free flour, sugar, baking powder, and salt.
- In another bowl, whisk together the applesauce, milk, oil, and eggs.
- Combine the wet and dry ingredients until just mixed.
- Gently fold in the blueberries.
- Fill muffin liners with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- For best results, use fresh blueberries.
- Can substitute applesauce with mashed bananas for a different flavor.
