Delicious gluten-free apple fritters that are crispy on the outside and soft on the inside.
Ingredients

- 2 cups gluten-free flour
- 1 cup apples, diced
- 1/2 cup sugar
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Oil for frying
Instructions
- In a bowl, mix flour, sugar, baking powder, and cinnamon.
- In another bowl, whisk eggs, milk, and vanilla.
- Combine wet and dry ingredients.
- Fold in diced apples.
- Heat oil in a pan over medium heat.
- Drop spoonfuls of batter into the oil.
- Fry until golden brown on both sides.
- Drain on paper towels.
Notes
- Serve warm.
- Can be dusted with powdered sugar.
