Ingredients

- 100g glass noodles
- 1 cup cucumber, diced
- 1 cup carrots, shredded
- 1 bell pepper, sliced
- 1/4 cup cilantro, chopped
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Soak glass noodles in hot water for 10 minutes until soft.
- Drain and rinse with cold water.
- In a large bowl, combine glass noodles, cucumber, carrots, bell pepper, and cilantro.
- In a small bowl, whisk together soy sauce, lime juice, sesame oil, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve chilled.
