Description

A refreshing and light salad made with glass noodles, fresh vegetables, and a tangy dressing.


Ingredients

  • 100g glass noodles
  • 1 cup cucumber, diced
  • 1 cup carrots, shredded
  • 1 bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Soak glass noodles in hot water for 10 minutes until soft.
  2. Drain and rinse with cold water.
  3. In a large bowl, combine glass noodles, cucumber, carrots, bell pepper, and cilantro.
  4. In a small bowl, whisk together soy sauce, lime juice, sesame oil, salt, and pepper.
