Description

A flavorful dish featuring marinated pork with ginger and lime, served over creamy coconut rice.


Ingredients

  • 1 lb pork tenderloin
  • 2 tablespoons ginger, grated
  • 2 limes, juiced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 cup jasmine rice
  • 1 can (14 oz) coconut milk
  • 1 cup water
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Marinate pork with ginger, lime juice, soy sauce, and honey for at least 1 hour.
  2. Rinse jasmine rice under cold water.
  3. In a pot, combine coconut milk, water, and salt; bring to a boil.
  4. Add rice to the pot, reduce heat, cover, and simmer for 15 minutes.
  5. Grill or pan-sear the marinated pork until cooked through, about 6-8 minutes per side.
  6. Let pork rest for 5 minutes, then slice.
  7. Serve pork over coconut rice, garnished with cilantro.
