Description

A quick and delightful garlic shrimp pasta recipe that combines rich flavors of garlic and succulent shrimp, perfect for busy weeknights or special occasions.

Ingredients

  • Spaghetti: 250 grams (about 8 ounces)
  • Shrimp: 400 grams (about 14 ounces), peeled and deveined
  • Garlic: 4 cloves, minced
  • Olive oil: 4 tablespoons
  • Red pepper flakes: 1 teaspoon
  • Fresh parsley: 1/4 cup, chopped
  • Lemon juice: 2 tablespoons, freshly squeezed
  • Grated Parmesan cheese: 1/2 cup (plus extra for serving)
  • Salt and black pepper: to taste

Instructions

  1. Prepare all ingredients by measuring and chopping as needed.
  2. Cook the spaghetti in a large pot of salted boiling water until al dente, about 8-10 minutes, reserving 1 cup of pasta water before draining.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat and sauté the shrimp until pink and opaque, about 2-3 minutes per side. Remove and set aside.
  4. In the same skillet, add the remaining olive oil, minced garlic, and red pepper flakes, sautéing until fragrant.
  5. Add the drained spaghetti to the skillet, tossing to coat, and add reserved pasta water as needed for consistency.
  6. Return the shrimp to the skillet, add lemon juice and parsley, and toss to combine. Adjust seasoning with salt and pepper.
  7. Serve immediately, garnished with grated Parmesan cheese and additional parsley if desired.

Notes

  • Overcooking the shrimp can make it rubbery; aim for 3-5 minutes of cooking time.
  • Always salt the pasta water to enhance flavor.
  • Reserve pasta water for a silky sauce.
  • Taste as you go to adjust seasoning.
