Description

Ingredients

  • 1 pound fresh green beans
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions

  1. Trim the ends of the green beans.
  2. In a large pot, bring water to a boil and blanch the green beans for 3-4 minutes.
  3. Drain and immediately transfer the beans to ice water to stop cooking.
  4. In a skillet, heat olive oil over medium heat.
  5. Add minced garlic and sauté for 1 minute.
  6. Add the blanched green beans and sauté for another 3-4 minutes.
  7. Add lemon zest, lemon juice, salt, and pepper. Toss to combine.
  8. Serve warm.

Notes

  • Adjust lemon juice to taste.
  • Can add red pepper flakes for heat.
  • Fresh beans work best for this recipe.
