- 2 tablespoons olive oil: Used to coat the potatoes before roasting, adding flavor and helping them crisp up.

Instructions
- Prepare the ingredients by cutting the sirloin steak into bite-sized pieces and halving the baby potatoes.
- Preheat the oven to 400°F (200°C) and toss the halved baby potatoes with olive oil, salt, pepper, and half of the chopped rosemary and thyme. Spread them on a baking sheet and roast for 25-30 minutes, flipping halfway through.
- Heat a large skillet over medium-high heat, add 2 tablespoons of butter, and sear the steak bites for 2-3 minutes on each side until medium-rare. Remove from skillet and set aside.
- In the same skillet, lower the heat to medium, add the remaining 2 tablespoons of butter, minced garlic, the rest of the herbs, and a pinch of salt and pepper. Sauté for 1-2 minutes until fragrant.
- Return the cooked steak bites to the skillet with the garlic butter sauce, toss gently to coat, and heat through. Serve the steak bites over the roasted potatoes, garnished with fresh parsley.
