- 1 lb (450 g) large shrimp, peeled and deveined
- 2 cups (300 g) corn kernels, fresh, frozen, or canned
- 4 tablespoons (60 g) unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt, adjust to taste
- 1/4 teaspoon black pepper, freshly ground
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon lemon juice, optional
- 1 tablespoon olive oil
Instructions
- Prepare the shrimp by thawing if frozen and patting dry.
- Heat a large cast iron skillet over medium-high heat, add olive oil, and cook the shrimp for 2-3 minutes on each side until pink and opaque.
- Remove the shrimp and set aside. In the same skillet, reduce heat to medium, add butter, and melt.
- Add minced garlic and sauté for 30 seconds, then stir in corn kernels and cook for 3-4 minutes.
- Return shrimp to the skillet, add lemon juice if desired, and toss everything together. Cook for an additional 1-2 minutes.
- Remove from heat, garnish with parsley, and serve hot.
