Description

A savory and crunchy corn salad made with Fritos.


Ingredients

  • 2 cups corn, canned or frozen
  • 1 cup Fritos corn chips
  • 1 cup diced tomatoes
  • 1 cup diced bell pepper
  • 1/2 cup diced red onion
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 tablespoon ranch seasoning

Instructions

  1. In a large bowl, combine corn, tomatoes, bell pepper, red onion, and cheese.
  2. In a separate bowl, mix mayonnaise and ranch seasoning.
  3. Pour the dressing over the corn mixture and stir to combine.
  4. Add Fritos corn chips and gently fold them in.
  5. Refrigerate for at least 30 minutes before serving.
