Description
A savory and crunchy corn salad made with Fritos.
Ingredients

- 2 cups corn, canned or frozen
- 1 cup Fritos corn chips
- 1 cup diced tomatoes
- 1 cup diced bell pepper
- 1/2 cup diced red onion
- 1 cup shredded cheddar cheese
- 1 cup mayonnaise
- 1 tablespoon ranch seasoning
Instructions
- In a large bowl, combine corn, tomatoes, bell pepper, red onion, and cheese.
- In a separate bowl, mix mayonnaise and ranch seasoning.
- Pour the dressing over the corn mixture and stir to combine.
- Add Fritos corn chips and gently fold them in.
- Refrigerate for at least 30 minutes before serving.
Notes
- Serve chilled for the best flavor.
- Can substitute Greek yogurt for mayonnaise.
- Add avocado for extra creaminess.
