Description
Frijoles Puercos is a traditional Mexican dish made with beans and pork.
Ingredients

- 2 cups pinto beans
- 1 lb pork belly, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups water
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup grated cheese (optional)
Instructions
- Soak the pinto beans overnight.
- In a pot, cook the diced pork until browned.
- Add onion and garlic; sauté until softened.
- Drain the beans and add to the pot with water.
- Stir in cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Mash some beans for a thicker consistency.
- Serve hot, topped with cheese if desired.
Notes
- Adjust seasoning to taste.
- Serve with tortillas or rice.
- Can be made in advance and reheated.
