Description

Frijoles Puercos is a traditional Mexican dish made with beans and pork.


Ingredients

  • 2 cups pinto beans
  • 1 lb pork belly, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups water
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup grated cheese (optional)

Instructions

  1. Soak the pinto beans overnight.
  2. In a pot, cook the diced pork until browned.
  3. Add onion and garlic; sauté until softened.
  4. Drain the beans and add to the pot with water.
  5. Stir in cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  7. Mash some beans for a thicker consistency.
  8. Serve hot, topped with cheese if desired.

Notes

  • Adjust seasoning to taste.
  • Serve with tortillas or rice.
  • Can be made in advance and reheated.
