- 4 large onions, thinly sliced
- 4 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 8 cups beef broth
- 1 cup dry white wine
- 1 baguette, sliced
- 2 cups grated Gruyère cheese
- Salt and pepper to taste
Instructions
- In a large pot, melt butter and olive oil over medium heat.
- Add onions and sugar; cook until caramelized, about 30 minutes.
- Pour in wine and scrape the bottom to deglaze the pot.
- Add beef broth; bring to a simmer for 20 minutes.
- Season with salt and pepper.
- Preheat the oven to broil.
- Serve soup in oven-safe bowls, top with baguette slices and cheese.
- Broil until cheese is melted and bubbly.

- For a richer flavor, use homemade beef broth.
