Description

A classic French onion soup made with caramelized onions, beef broth, and topped with melted cheese.


Ingredients

  • 4 large onions, thinly sliced
  • 4 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1 cup dry white wine
  • 1 baguette, sliced
  • 2 cups grated Gruyère cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter and olive oil over medium heat.
  2. Add onions and sugar; cook until caramelized, about 30 minutes.
  3. Pour in wine and scrape the bottom to deglaze the pot.
  4. Add beef broth; bring to a simmer for 20 minutes.
  5. Season with salt and pepper.
  6. Preheat the oven to broil.
  7. Serve soup in oven-safe bowls, top with baguette slices and cheese.
  8. Broil until cheese is melted and bubbly.
