- 2 cups orzo
- 1 lb chicken breast, diced
- 2 cups onions, sliced
- 4 cups beef broth
- 1 cup Swiss cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onions and cook until caramelized.
- Add diced chicken and cook until browned.
- Stir in thyme, salt, and pepper.
- Add orzo and beef broth, bring to a boil.
- Reduce heat and simmer until orzo is cooked.
- Stir in Swiss cheese until melted.
- Serve warm.
