Ingredients

- 1 lb beef stew meat
- 2 cups egg noodles
- 2 large onions, sliced
- 2 cups beef broth
- 1 cup shredded Swiss cheese
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add sliced onions and cook until caramelized, about 15 minutes.
- Add beef stew meat and brown on all sides.
- Pour in beef broth and add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Cook egg noodles according to package instructions.
- Drain noodles and mix into the beef and onion mixture.
- Transfer to a baking dish and top with Swiss cheese.
- Bake at 350°F for 15 minutes or until cheese is melted and bubbly.

- Use low-sodium beef broth for a healthier option.
- Feel free to add mushrooms for extra flavor.
