Description

Ingredients

  • 3 tablespoons soy sauce
  • 2 tablespoons chili paste
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 chicken thighs, boneless and skinless
  • Salt and pepper
  • 1 tablespoon vegetable oil
  • 2 soft-boiled eggs
  • 2 scallions, chopped (green parts only)
  • Optional toppings: sesame seeds, nori (seaweed), additional chili flakes

Instructions

  1. Prepare the broth by combining chicken broth, soy sauce, chili paste, minced garlic, and grated ginger in a pot. Simmer for 5-10 minutes.
  2. Season chicken thighs with salt and pepper, then sear in a skillet with vegetable oil for 5-7 minutes on each side until golden brown. Let rest and slice.
  3. Boil ramen noodles in a separate pot according to package instructions, then drain.
  4. Assemble the ramen by placing noodles in bowls, pouring broth over, adding sliced chicken, soft-boiled eggs, and garnishing with scallions and optional toppings.
