Instructions
- Prepare the broth by combining chicken broth, soy sauce, chili paste, minced garlic, and grated ginger in a pot. Simmer for 5-10 minutes.
- Season chicken thighs with salt and pepper, then sear in a skillet with vegetable oil for 5-7 minutes on each side until golden brown. Let rest and slice.
- Boil ramen noodles in a separate pot according to package instructions, then drain.
- Assemble the ramen by placing noodles in bowls, pouring broth over, adding sliced chicken, soft-boiled eggs, and garnishing with scallions and optional toppings.
