Instructions
- In a bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk egg yolks, milk, melted butter, and vanilla.
- Mix the wet ingredients into the dry ingredients until just combined.
- In a separate bowl, beat egg whites until stiff peaks form.
- Gently fold the egg whites into the batter.
- Heat a non-stick skillet over medium-low heat and grease it.
- Pour batter onto the skillet, using a ring mold if desired.
- Cook until bubbles form on the surface, then flip and cook until golden.
- Serve warm with syrup or toppings of choice.
Notes

- Do not overmix the batter.
- Keep pancakes warm in the oven while cooking the rest.
