- 1 large eggplant, sliced into rounds
- 1 cup marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange eggplant slices on a baking sheet and sprinkle with salt. Let sit for 15 minutes to draw out moisture.
- Rinse and pat dry the eggplant slices.
- Spread marinara sauce on each eggplant slice.
- Top with mozzarella cheese and sprinkle with Parmesan cheese, oregano, garlic powder, salt, and pepper.
- Bake for 20-25 minutes until cheese is bubbly and golden.
- Garnish with fresh basil before serving.
