Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mash the black beans and mix in corn, cumin, chili powder, and salt.
  3. Warm the tortillas in a skillet until soft.
  4. Spoon the bean mixture onto each tortilla and roll tightly.
  5. Place the rolled taquitos on a baking sheet.
  6. Bake for 15-20 minutes until crispy.
  7. Serve with avocado slices and cilantro.
