- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 small corn tortillas
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mash the black beans and mix in corn, cumin, chili powder, and salt.
- Warm the tortillas in a skillet until soft.
- Spoon the bean mixture onto each tortilla and roll tightly.
- Place the rolled taquitos on a baking sheet.
- Bake for 15-20 minutes until crispy.
- Serve with avocado slices and cilantro.
