Instructions
- In a bowl, whisk together flour and salt.
- In another bowl, beat the eggs and mix with milk and melted butter.
- Combine wet and dry ingredients until smooth.
- Heat a non-stick pan over medium heat.
- Pour a thin layer of batter into the pan, swirling to coat.
- Cook for 1-2 minutes until edges lift, then flip and cook for another minute.
- Remove and fill with cheese, spinach, and tomatoes.
- Fold and serve warm.
