Description

A quick and simple recipe for one pot pasta primavera.


Ingredients

Scale
  • 8 oz pasta
  • 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tsp Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add garlic and sauté for 1 minute.
  3. Add mixed vegetables and cook for 3-4 minutes.
  4. Pour in vegetable broth and add pasta.
  5. Stir in Italian seasoning, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 10-12 minutes, stirring occasionally.
  7. Once pasta is cooked, remove from heat and stir in Parmesan cheese if using.
  8. Serve hot.
