A quick and simple recipe for one pot pasta primavera.
Ingredients

- 8 oz pasta
- 2 cups mixed vegetables (bell peppers, zucchini, broccoli)
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp Italian seasoning
- Salt to taste
- Black pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add garlic and sauté for 1 minute.
- Add mixed vegetables and cook for 3-4 minutes.
- Pour in vegetable broth and add pasta.
- Stir in Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10-12 minutes, stirring occasionally.
- Once pasta is cooked, remove from heat and stir in Parmesan cheese if using.
- Serve hot.
Notes
- Feel free to use seasonal vegetables.
- Store leftovers in the refrigerator for up to 3 days.
