Ingredients

- 2 cups cooked white beans
- 1/4 cup olive oil
- 3 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- In a bowl, combine olive oil, apple cider vinegar, garlic, oregano, salt, and pepper.
- Add the cooked white beans to the mixture.
- Gently toss to coat the beans evenly.
- Cover and refrigerate for at least 2 hours.
- Before serving, stir in fresh parsley.
Notes
- Can be made a day ahead for better flavor.
- Serve as a salad or side dish.
