A light and airy lemon mousse that is easy to prepare.
Ingredients

- 1 cup heavy cream
- 1/2 cup sugar
- 2 large lemons, juiced and zested
- 3 large egg whites
- 1 teaspoon vanilla extract
Instructions
- In a bowl, whip the heavy cream until soft peaks form.
- In another bowl, combine lemon juice, zest, sugar, and vanilla extract.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the lemon mixture into the whipped cream.
- Then fold in the beaten egg whites until fully combined.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours.
Notes
- Adjust the sugar to taste.
- For a richer flavor, use organic lemons.
- Serve with fresh berries for garnish.
