- 1 medium onion, quartered
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 head green cabbage, cut into wedges
- 4 medium carrots, peeled and cut into chunks
- 1 tablespoon black peppercorns
- 2 bay leaves
Instructions
- Place the corned beef in a large pot.
- Add the onion, garlic, beef broth, black peppercorns, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 2.5 hours.
- Add the carrots and cabbage to the pot.
- Cover and cook for an additional 30 minutes until vegetables are tender.
- Slice the corned beef against the grain and serve with vegetables.
