- 1 can black beans (15 oz)
- 1 cup shredded cheese
- 8 corn tortillas
- 2 cups enchilada sauce
- 1/2 cup diced onions
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix black beans, cheese, onions, cumin, and chili powder.
- Heat tortillas in olive oil until slightly soft.
- Spoon bean mixture onto each tortilla and roll them up.
- Place rolled tortillas in a baking dish.
- Pour enchilada sauce over the top.
- Bake for 20 minutes.
- Serve warm.
