Description
A hearty and comforting stew made with earthy mushrooms and white beans.
Ingredients

- 2 cups of mushrooms, sliced
- 1 can (15 oz) white beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 carrots, diced
- 1 celery stalk, diced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Heat a pot over medium heat.
- Add onion and garlic, sauté until translucent.
- Stir in carrots and celery, cook for 5 minutes.
- Add mushrooms, cook until softened.
- Add white beans, vegetable broth, thyme, and rosemary.
- Bring to a boil, then simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- Serve with crusty bread.
- Can add spinach for extra nutrition.
- Store leftovers in the fridge for up to 3 days.
