- 1 lb chicken breast
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup tzatziki sauce
- 1 cup diced cucumbers
- 1/2 cup diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, combine rice, chicken broth, garlic powder, onion powder, salt, and pepper.
- Place the chicken breasts on top of the rice mixture.
- Cover the dish tightly with aluminum foil.
- Bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes or until the chicken is cooked through.
- Let it rest for 5 minutes before serving.
- Top with tzatziki sauce, cucumbers, and tomatoes before serving.
Notes
- For extra flavor, marinate the chicken in tzatziki sauce for a few hours before baking.
- You can use brown rice, but adjust cooking time accordingly.
- Leftovers can be stored in the refrigerator for up to 3 days.
