Description

A simple and flavorful one-dish meal featuring chicken, rice, and tzatziki sauce.


Ingredients

  • 1 lb chicken breast
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup tzatziki sauce
  • 1 cup diced cucumbers
  • 1/2 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine rice, chicken broth, garlic powder, onion powder, salt, and pepper.
  3. Place the chicken breasts on top of the rice mixture.
  4. Cover the dish tightly with aluminum foil.
  5. Bake for 45 minutes.
  6. Remove the foil and bake for an additional 15 minutes or until the chicken is cooked through.
  7. Let it rest for 5 minutes before serving.
  8. Top with tzatziki sauce, cucumbers, and tomatoes before serving.

Notes

  • For extra flavor, marinate the chicken in tzatziki sauce for a few hours before baking.
  • You can use brown rice, but adjust cooking time accordingly.
  • Leftovers can be stored in the refrigerator for up to 3 days.
