Ingredients

  • Mixed greens – 4 cups
  • Cucumber – 1, sliced
  • Cherry tomatoes – 1 cup, halved
  • Red onion – 1/4 cup, thinly sliced
  • Feta cheese – 1/2 cup, crumbled
  • Olives – 1/4 cup, pitted and sliced
  • Olive oil – 3 tablespoons
  • Balsamic vinegar – 2 tablespoons
  • Salt – to taste
  • Pepper – to taste

Instructions

  1. Wash and dry the mixed greens.
  2. Slice the cucumber and red onion.
  3. Halve the cherry tomatoes.
  4. In a large bowl, combine the mixed greens, cucumber, tomatoes, red onion, feta cheese, and olives.
