Ingredients
- Mixed greens – 4 cups
- Cucumber – 1, sliced
- Cherry tomatoes – 1 cup, halved
- Red onion – 1/4 cup, thinly sliced
- Feta cheese – 1/2 cup, crumbled
- Olives – 1/4 cup, pitted and sliced
- Olive oil – 3 tablespoons
- Balsamic vinegar – 2 tablespoons
- Salt – to taste
- Pepper – to taste
Instructions
- Wash and dry the mixed greens.
- Slice the cucumber and red onion.
- Halve the cherry tomatoes.
- In a large bowl, combine the mixed greens, cucumber, tomatoes, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately.
