A refreshing dill pickle pasta salad with a tangy twist.
Ingredients

- 2 cups rotini pasta
- 1 cup dill pickles, chopped
- 1/2 cup red onion, diced
- 1/2 cup celery, chopped
- 1 cup mayonnaise
- 2 tablespoons pickle juice
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions.
- Drain and rinse the pasta under cold water.
- In a large bowl, combine pasta, dill pickles, red onion, and celery.
- In a separate bowl, mix mayonnaise, pickle juice, and Dijon mustard.
- Pour the dressing over the pasta mixture and stir to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust the amount of pickle juice to your taste.
- Add cooked chicken for extra protein.
- This salad can be made a day in advance.
