A refreshing detox salad packed with nutrients.
Ingredients
Scale
- 2 cups kale, chopped
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables.
- In a large bowl, combine kale, cucumber, cherry tomatoes, bell pepper, and red onion.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss well.
- Serve immediately or chill for 30 minutes before serving.
Notes
- Feel free to add other vegetables or proteins.
- Store leftovers in the fridge for up to 2 days.
- Adjust dressing to taste.
