- 4 large potatoes, peeled and sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 4 tablespoons butter
- 2 cups vegetable broth
- Salt to taste
- Pepper to taste
Instructions
- Heat butter in a large skillet over medium heat.
- Add onions and bell peppers, sauté until soft.
- Add sliced potatoes to the skillet.
- Pour vegetable broth over the potatoes.
- Season with salt and pepper.
- Cover and cook for 30 minutes, stirring occasionally.
- Remove the lid and cook for an additional 10 minutes until potatoes are tender.
