- 1 large head of cauliflower, chopped
- 1 cup of cooked rice
- 1 cup of coconut milk
- 2 tablespoons curry powder
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup of vegetable broth
- Salt and pepper to taste
- 1/2 cup grated cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, sauté onion and garlic until soft.
- Add chopped cauliflower and curry powder, stir well.
- Pour in vegetable broth and coconut milk, simmer for 10 minutes.
- Mix in cooked rice and season with salt and pepper.
- Transfer to a baking dish and top with cheese if using.
- Bake for 25-30 minutes until golden and bubbly.
Notes
- Use fresh cauliflower for the best texture.
- Try adding other vegetables like peas or carrots.
- This dish can be made ahead and reheated.
