Description
A refreshing cucumber dill yogurt salad that is light and healthy.
Ingredients

- 2 cups cucumber, diced
- 1 cup plain yogurt
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Salt, to taste
- Pepper, to taste
Instructions
- In a bowl, combine diced cucumber and salt. Let it sit for 10 minutes to release water.
- In another bowl, mix yogurt, dill, lemon juice, garlic, salt, and pepper.
- Drain excess water from cucumbers.
- Add cucumbers to the yogurt mixture and stir gently.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Serve as a side dish or a light lunch.
- Can be made a day in advance.
- Adjust seasoning according to your taste.
