Ingredients

- 2 cups cucumbers, thinly sliced
- 1 cup chickpeas, drained and rinsed
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine cucumbers, chickpeas, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the slaw and toss to combine.
- Let it sit for 10 minutes to allow flavors to meld.
- Serve chilled or at room temperature.
Notes
- This slaw can be made a day ahead.
- For added crunch, consider adding shredded carrots.
- Adjust the seasoning to your taste.
