Ingredients

- 1 cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup Greek yogurt
- 2 tablespoons lemon juice
- Salt to taste
- Pepper to taste
Instructions
- In a large bowl, combine shredded chicken, cucumber, cherry tomatoes, red onion, and cilantro.
- In a separate bowl, mix Greek yogurt and lemon juice.
- Add the yogurt mixture to the chicken and vegetables.
- Season with salt and pepper.
- Toss everything together until well combined.
- Chill in the refrigerator for 30 minutes before serving.
