Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cup red bell pepper, diced
- 1 cup cucumber, diced
- 1 cup carrots, shredded
- 1/2 cup green onions, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanuts, chopped
Instructions
- Cook quinoa in water according to package instructions.
- Let quinoa cool to room temperature.
- In a large bowl, combine quinoa, bell pepper, cucumber, carrots, green onions, and cilantro.
- In a separate bowl, whisk together peanut butter, soy sauce, lime juice, and honey to make the dressing.
- Pour dressing over the salad and toss to combine.
- Top with chopped peanuts before serving.
