Description

Crockpot queso chicken quesadillas are a delicious and easy meal made in a slow cooker. They combine tender chicken, creamy queso, and crispy tortillas for a satisfying dish.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup queso cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 teaspoon taco seasoning
  • 8 flour tortillas
  • 1 cup shredded cheese for topping

Instructions

  1. Place shredded chicken, queso, black beans, corn, and taco seasoning in the crockpot.
  2. Mix well and cook on low for 4 hours.
  3. Heat a skillet over medium heat.
  4. Fill each tortilla with the chicken mixture and sprinkle with shredded cheese.
  5. Fold the tortilla in half and cook in the skillet until golden brown on both sides.
