- 1 cup queso cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 teaspoon taco seasoning
- 8 flour tortillas
- 1 cup shredded cheese for topping
Instructions
- Place shredded chicken, queso, black beans, corn, and taco seasoning in the crockpot.
- Mix well and cook on low for 4 hours.
- Heat a skillet over medium heat.
- Fill each tortilla with the chicken mixture and sprinkle with shredded cheese.
- Fold the tortilla in half and cook in the skillet until golden brown on both sides.
- Repeat with remaining tortillas.
- Cut into wedges and serve warm.
