A simple and hearty crockpot chuck roast recipe that yields tender meat and flavorful gravy.
Ingredients

- 3–4 lbs chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried thyme
- 1 bay leaf
Instructions
- Season the chuck roast with salt and pepper.
- Heat a skillet over medium-high heat and sear the roast on all sides until browned.
- Place the chopped onion, garlic, carrots, and potatoes in the crockpot.
- Add the seared roast on top of the vegetables.
- In a bowl, mix beef broth, Worcestershire sauce, thyme, and bay leaf. Pour over the roast.
- Cover and cook on low for 8-10 hours or high for 4-5 hours until tender.
- Remove the roast and vegetables; shred the meat and serve with gravy.
Notes
- For extra flavor, add mushrooms or peppers.
- Adjust seasoning to taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
