Description

Ingredients

  • 34 lbs chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat a skillet over medium-high heat and sear the roast on all sides until browned.
  3. Place the chopped onion, garlic, carrots, and potatoes in the crockpot.
  4. Add the seared roast on top of the vegetables.
  5. In a bowl, mix beef broth, Worcestershire sauce, thyme, and bay leaf. Pour over the roast.
  6. Cover and cook on low for 8-10 hours or high for 4-5 hours until tender.
  7. Remove the roast and vegetables; shred the meat and serve with gravy.

Notes
