Description

A simple and flavorful dish made with chicken and fajita spices cooked in a crockpot.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes with green chilies
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add the sliced bell pepper and onion on top of the chicken.
  3. Sprinkle the fajita seasoning over the vegetables and chicken.
  4. Pour the diced tomatoes over the mixture.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Shred the chicken with two forks and mix everything together before serving.
