A hearty and flavorful crock pot Italian meatball soup.
Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 cup pasta (optional)
- Salt and pepper to taste
Instructions
- In a bowl, mix ground beef, breadcrumbs, Parmesan, parsley, egg, garlic, Italian seasoning, salt, and pepper.
- Form mixture into small meatballs.
- Place meatballs in the crock pot.
- Add beef broth, diced tomatoes, carrots, and celery.
- Cook on low for 6-8 hours or high for 3-4 hours.
- If using, add pasta 30 minutes before serving.
Notes
- Adjust seasoning as needed.
- Top with extra Parmesan before serving.
