Description

A hearty and flavorful crock pot Italian meatball soup.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup pasta (optional)
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan, parsley, egg, garlic, Italian seasoning, salt, and pepper.
  2. Form mixture into small meatballs.
  3. Place meatballs in the crock pot.
  4. Add beef broth, diced tomatoes, carrots, and celery.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. If using, add pasta 30 minutes before serving.

Notes

  • Adjust seasoning as needed.
  • Top with extra Parmesan before serving.
