- 4 chicken thighs
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/2 teaspoon black pepper
- 2 green onions, chopped
Instructions
- Place chicken thighs in the crock pot.
- In a bowl, mix pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, and black pepper.
- Pour the sauce over chicken in the crock pot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Once cooked, shred the chicken with forks and mix it with the sauce.
- Garnish with chopped green onions before serving.
Notes
- Serve with rice or steamed vegetables.
- Adjust sweetness by adding more or less brown sugar.
- Can use chicken breasts instead of thighs.
