Description

Crispy vegetable zucchini fritters are a healthy snack or side dish.


Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped green onions
  • Oil for frying

Instructions

  1. Grate zucchinis and place in a bowl. Sprinkle with salt and let sit for 10 minutes.
  2. After 10 minutes, squeeze out excess moisture from the zucchinis.
  3. Add flour, Parmesan cheese, egg, black pepper, garlic powder, and green onions to the bowl. Mix well.
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of the mixture into the skillet. Flatten slightly.
  6. Cook for 3-4 minutes on each side or until golden brown.
  7. Remove from skillet and drain on paper towels.

Notes

  • Serve warm with your favorite dipping sauce.
