Description
Crispy vegetable zucchini fritters are a healthy snack or side dish.
Ingredients

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup chopped green onions
- Oil for frying
Instructions
- Grate zucchinis and place in a bowl. Sprinkle with salt and let sit for 10 minutes.
- After 10 minutes, squeeze out excess moisture from the zucchinis.
- Add flour, Parmesan cheese, egg, black pepper, garlic powder, and green onions to the bowl. Mix well.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet. Flatten slightly.
- Cook for 3-4 minutes on each side or until golden brown.
- Remove from skillet and drain on paper towels.
Notes
- Serve warm with your favorite dipping sauce.
- Store leftovers in the refrigerator for up to 2 days.
