- 1 lb salmon fillet, cut into bite-sized pieces
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup cooked rice
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon lime juice
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Season the salmon pieces with salt and pepper.
- Dredge the salmon in flour, dip in beaten eggs, and coat with panko breadcrumbs.
- Place the salmon bites on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until golden and crispy.
- In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and lime juice to create the bang bang sauce.
- Serve the crispy salmon bites over cooked rice.
- Drizzle with bang bang sauce and garnish with green onions.
