- 2 medium zucchinis, cut into fries
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
- In a bowl, combine breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each zucchini fry into the eggs, then coat with the breadcrumb mixture.
- Place coated fries on the prepared baking sheet.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve immediately.
Notes
- For extra crispiness, spray fries with cooking oil before baking.
- Try adding herbs for more flavor.
