- 300 grams (10.5 oz) of spiral pasta (Fusilli or rotini)
- 2 tablespoons of olive oil
- 2 boneless, skinless chicken breasts (about 500 grams or 1 lb), cut into bite-sized pieces
- Salt and pepper to taste
- 3 cloves of garlic, minced
- 200 grams (7 oz) of sun-dried tomatoes, chopped
- 250 ml (1 cup) of heavy cream
- 100 grams (3.5 oz) of grated Parmesan cheese (plus extra for serving)
- 1 teaspoon of Italian seasoning (optional)
- Fresh basil leaves for garnish
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper. Heat olive oil in a skillet and cook the chicken until golden brown and cooked through, then set aside.
- In a large pot, bring salted water to a boil and cook the spiral pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In the same skillet, sauté minced garlic until fragrant, then add sun-dried tomatoes and cook for a few minutes. Pour in heavy cream and bring to a gentle simmer, then stir in grated Parmesan cheese.
- Add the cooked pasta and chicken to the skillet, tossing everything together to coat in the sauce. Cook for an additional 2-3 minutes.
- Serve warm, garnished with fresh basil leaves and extra Parmesan cheese.

- For a vegetarian option, omit the chicken and use mushrooms or chickpeas.
- Add extra vegetables like spinach, bell peppers, or zucchini for added nutrition.
