Ingredients

  • 300 grams (10.5 oz) of spiral pasta (Fusilli or rotini)
  • 2 tablespoons of olive oil
  • 2 boneless, skinless chicken breasts (about 500 grams or 1 lb), cut into bite-sized pieces
  • Salt and pepper to taste
  • 3 cloves of garlic, minced
  • 200 grams (7 oz) of sun-dried tomatoes, chopped
  • 250 ml (1 cup) of heavy cream
  • 100 grams (3.5 oz) of grated Parmesan cheese (plus extra for serving)
  • 1 teaspoon of Italian seasoning (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper. Heat olive oil in a skillet and cook the chicken until golden brown and cooked through, then set aside.
  2. In a large pot, bring salted water to a boil and cook the spiral pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  3. In the same skillet, sauté minced garlic until fragrant, then add sun-dried tomatoes and cook for a few minutes. Pour in heavy cream and bring to a gentle simmer, then stir in grated Parmesan cheese.
  4. Add the cooked pasta and chicken to the skillet, tossing everything together to coat in the sauce. Cook for an additional 2-3 minutes.
  5. Serve warm, garnished with fresh basil leaves and extra Parmesan cheese.
