Ingredients

  • 4 medium beets, roasted and peeled
  • 4 cups mixed greens
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, toasted
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wrap beets in foil and roast for 45-60 minutes until tender.
  3. Let beets cool, then peel and slice.
  4. In a large bowl, combine mixed greens, beets, feta, and walnuts.
