- 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
- 8 oz (225 g) penne pasta
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups (60 g) fresh spinach
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Cook the penne pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Drain and reserve 1/2 cup of pasta water.
- Season the chicken breasts with salt and black pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken for 6-7 minutes on each side until golden brown and cooked through. Let it rest and then slice.
- In the same skillet, sauté minced garlic for 30 seconds, then add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth, adjusting with reserved pasta water if needed.
- Add cooked penne and fresh spinach to the sauce, tossing gently until well coated and spinach wilts. Mix in the sliced chicken.
- Serve warm, garnished with additional Parmesan cheese and black pepper.
