- 400 ml (1.7 cups) vegetable broth: This will be the base of your sauce.
- 200 ml (0.85 cups) heavy cream: For a rich and creamy finish.
- 50 grams (1.75 oz) grated Parmesan cheese: Plus extra for serving, to enhance the flavor.
- 2 tablespoons olive oil: For sautéing the vegetables.
- 1 teaspoon dried thyme: Or 1 tablespoon fresh thyme for a fragrant touch.
- Salt and pepper: To taste, for seasoning.
- Fresh parsley: Chopped, for garnish and a pop of color.
Instructions
- Heat olive oil in a large pot or deep skillet over medium heat. Add finely chopped onion and sauté for 3-4 minutes until translucent.
- Add minced garlic and sliced mushrooms, cooking for another 5-7 minutes until mushrooms are tender and slightly browned.
- Pour in vegetable broth and sprinkle in dried thyme. Bring to a boil, then add pasta, ensuring it is fully submerged.
- Reduce heat to a gentle simmer, cover, and cook pasta according to package instructions (about 10-12 minutes), stirring occasionally.
- Once pasta is cooked, stir in heavy cream and grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
- Remove from heat and let sit for a couple of minutes to thicken. Serve garnished with extra Parmesan and fresh parsley.
