  • 2 tablespoons olive oil: For sautéing the vegetables.
  • 1 teaspoon dried thyme: Or 1 tablespoon fresh thyme for a fragrant touch.
  • Salt and pepper: To taste, for seasoning.
  • Fresh parsley: Chopped, for garnish and a pop of color.

Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat. Add finely chopped onion and sauté for 3-4 minutes until translucent.
  2. Add minced garlic and sliced mushrooms, cooking for another 5-7 minutes until mushrooms are tender and slightly browned.
  3. Pour in vegetable broth and sprinkle in dried thyme. Bring to a boil, then add pasta, ensuring it is fully submerged.
  4. Reduce heat to a gentle simmer, cover, and cook pasta according to package instructions (about 10-12 minutes), stirring occasionally.
  5. Once pasta is cooked, stir in heavy cream and grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  6. Remove from heat and let sit for a couple of minutes to thicken. Serve garnished with extra Parmesan and fresh parsley.
