Description

A rich and creamy soup made with lobster and aromatic vegetables.


Ingredients

  • 2 lobster tails
  • 1 cup heavy cream
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrot, chopped
  • 4 cups seafood stock
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook the lobster tails in boiling water for 8-10 minutes. Remove and let cool.
  2. In a pot, melt butter over medium heat. Add onion, celery, and carrot. Sauté until tender.
  3. Add seafood stock and bring to a boil. Simmer for 10 minutes.
  4. Remove lobster meat from shells and chop into small pieces.
  5. Add chopped lobster to the pot and simmer for 5 minutes.
  6. Stir in heavy cream, salt, black pepper, and cayenne pepper. Heat through.
  7. Serve hot, garnished with fresh parsley.

Notes

  • Use fresh lobster for best flavor.
  • Adjust seasoning to taste.
