Description
A rich and creamy soup made with lobster and aromatic vegetables.
Ingredients

- 2 lobster tails
- 1 cup heavy cream
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped
- 1/2 cup carrot, chopped
- 4 cups seafood stock
- 2 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Cook the lobster tails in boiling water for 8-10 minutes. Remove and let cool.
- In a pot, melt butter over medium heat. Add onion, celery, and carrot. Sauté until tender.
- Add seafood stock and bring to a boil. Simmer for 10 minutes.
- Remove lobster meat from shells and chop into small pieces.
- Add chopped lobster to the pot and simmer for 5 minutes.
- Stir in heavy cream, salt, black pepper, and cayenne pepper. Heat through.
- Serve hot, garnished with fresh parsley.
Notes
- Use fresh lobster for best flavor.
- Adjust seasoning to taste.
- This soup can be made ahead and reheated.
